My Quest for knowledge
My quest for knowledge, and by knowledge, I mean the best of the best in Mexico. Rather personal, I have taken several of my favorites, and have made it my mission to find the best in each of those categories. My first quest: Consome. It's been a challenging quest, due to a couple of reasons, the primary reason: not all regions of Mexico make Consome. And if they do, it's more like Birria, rather than a Consome. The second reason, it is generally served on the weekends, when most people are hungover, and will go to their favorite Consome joint to sweat out the gallons of Tequila and Mezcal, consumed the (day) night before.
